Zucchini + Potatoes - A Dinner that Is Tastier than Cabbage Rolls and Dumplings.


This dish's recipe is a real find when there is 'almost nothing' in the fridge, but you want to eat something delicious. With zucchini, potatoes, and eggs, you get a tender, golden dish that can be served as a pie or a hot appetizer. Adding cheese and ham makes it even tastier.

You will need:
- 1 zucchini;
- 4 potatoes;
- 1 onion;
- 2 cloves of garlic;
- 4 eggs;
- 80 g of ham (optional);
- 80 g of hard cheese (optional);
- Oil - for frying;
- Salt, pepper - to taste.
Cooking Method
Cut the zucchini, potatoes, onion, and garlic into cubes. In heated oil, fry the onion until translucent. Add zucchini and potatoes, and stew for a few minutes until soft.
Add salt, pepper, garlic, mix, and warm for another minute. In a bowl, beat the eggs with a pinch of salt. Add the vegetable sauté, mix well.
In a clean frying pan, pour in a bit of oil, spread half of the egg-vegetable mixture. On top, place pieces of ham and cheese. Cover with the second half of the mixture, flatten with a spoon.
Cook covered on low heat for 10 minutes, until the bottom is browned. Then flip the preparation and cook for another 5 minutes until done. Serve hot.
