Winter 'General' Salad - recipe with cucumbers and tomatoes.


This sweet and sour vegetable salad is a true winter delight. Juicy tomatoes, crunchy cabbage, fragrant herbs, and fresh cucumbers cut in various ways create a wonderful combination of textures and flavors. The best part is that it does not require sterilization and can be stored until spring.

Ingredients:
- tomatoes - 2 kg;
- cucumbers - 2 kg;
- onion - 600 g;
- white cabbage - 600 g;
- carrot - 600 g;
- bell pepper - 600 g;
- parsley - 1 bunch;
- refined oil - 200 ml;
- 9% vinegar - 200 ml;
- salt - 4 tbsp;
- sugar - 200 g.
Preparation:
Cut the vegetables: finely shred the cabbage, slice the tomatoes and cucumbers into half-moons, cut the bell pepper into strips, and slice the carrot and onion into half-moons. Add chopped parsley.

In a large bowl, mix all the vegetables with salt, sugar, vinegar, oil, herbs, and pepper to taste. Stir well.
Let the salad sit for 3 hours at room temperature, stirring occasionally to release more juice.

Distribute the salad into sterilized jars, pour in the marinade to the top. Close the jars with sterile lids and sterilize for 20–25 minutes after boiling.
Seal the jars, turn them upside down and let cool. Store in a cool place.
